Traditional Andalusian cuisine is renowned for being wholesome and good for your health, and in Andalusia it also has an added bonus: it symbolises hospitality. It’s great fun to see the look of surprise on their faces when you serve them seafood or fish. Generally speaking, students will eat anything, and their host family will ask them what they like best and what they’re not so keen on.

Preparation of Traditional Dishes

Encouraging students to take part in preparing traditional dishes such as Spanish omelette or paella is also an opportunity for them to learn vocabulary that they don’t come across at school.

Students bring a snack for their break: a piece of fruit or a sandwich.

Special diets

Food is fuel for the brain, which consumes 20% of the body’s total energy, even though it accounts for only 2% of the body’s mass. A student who eats poorly is like a car without petrol: it doesn’t work. But not all students eat the same way, and there are special diets tailored to meet specific needs due to health reasons, beliefs or situations requiring high intellectual effort. Host families are prepared for these diets; not only are they aware of the restrictions, but they adapt with care to ensure the student feels at home. Before the student arrives, the family receives a detailed report on whether they are coeliac, vegan or have severe allergies.
